Easy Apple Cider Spice Cake

This is by far one of the easiest recipes I've ever made. Because it is literally a cake mix... with one small change!

I mean... I kind of love apple cider.... and I really love spice cake.

So I decided to do a little experiment to see if I could combine the two.... and I can! Oh yes, I can!!!!

And you can too.....

 

It's so easy.

All you need is:

1 box of spice cake mix

(3 eggs and 1/2 cup oil is what Betty Crocker calls for... but whatever your mix needs)

1 envelope of Apple Cider drink mix

And for the icing:

1 cup powdered sugar

1-3 tbsp milk

 

All you do is prepare the cake mix as directed except..... add one envelope Apple Cider drink mix to however much water your recipe calls for. Mine was one cup.

You don't have to heat it... just stir well!

Add this to your cake mix in place of plain water... spray your bundt pan and bake!

The cake mix box calls for 35-38 minutes. My cake was done in 28 minutes. Not sure if the time change was due to the cider or my oven....

be smart and start to check your cake around 25 minutes.

 

While baking prepare your icing.

Put one cup of powdered sugar into a mixing bowl and add milk 1 Tbsp at a time until your desired consistency. 

I use 3 Tbsp but kind of wished it had been thicker... so less milk... duh :)

Slowly pour the icing at the apex of the bundt... it will run into the crevices down both sides....

and be beautiful!

Slice and serve you sweet little deary doll faces!!!!!

 

If you are looking for something a little different but as easy as boxed cake mix... this is it.

Works great as cupcakes too!!!!

I made this tonight in our new house in WA. It was delish!! My 6-year-old son didn't want dinner, but saw this on the counter so, ummmm, I totally let him skip dinner and eat this...lol...he ate 3 pieces. Another great one!!!
