Girl Scout Cookie Cheesecakes... yes, yes I did!

Upon purchasing a box of Girl Scout cookies I begin to think of ways to make them MORE fattening.
And so this post begins....
This is my niece Hayley. She is a Girl Scout.
Do you know what that means?!?!?!?
COOKIES!!!!!!!!
Yes. That is my order. Yes. It is 14 boxes.
I ordered a few of everything knowing I wanted to try out some recipes and of course pass on to you......
The first recipe is amazing, easy and predictable on my part :)
Mini Girl Scout Cookie Cheesecakes.
I made 3 different kinds. Samoa with chocolate drizzle, Dosido with peanut butter cup, and Tagalong with Butterfinger topping. All have the basic cheesecake filling I showed you a couple of weeks ago and use the cookie as the crust.

I used white cupcake liners and placed the cookie in regular sized muffin tins.
Place the cheesecake filling on top.
And bake at 350 for 15-20 minutes.
Here is something important..... let the cheesecakes cool for about 1 minute in pan then move to cooling rack. Something in the chocolate of the Tagalong and Samoa cause them to stick to the muffin tin once they cool. If this happens stick them back in the oven for just a minute to heat up then remove.
I melted some choclate chips and drizzled on top of the Samoa cakes. Chopped Reese's PB cups for the Dosido cakes and crushed Butterfinger for the Tagalong cakes.
Samoa is definitely my favorite!!!!
But Tagalong comes in an easy second!
And then of course Dosido!!!
Love. Love. Love. These cheesecakes. Love.
So easy and so perfect for a make and take.... or a make and eat all you can.
I made several other recipes and had a cute little party I called a "Troop Meeting" in order to celebrate the arrival of my cookies. Stay tuned this week for the other recipes....
