Eclair Cake... OMGoodness!

I was trying to decide if this recipe was too "summery" because it is a cold dessert but then I remembered that thick layer of homemade chocolate icing on top and figured y'all wouldn't mind. Oh and... you don't even have to bake it. Win. Win.

Like the Buffalo Chicken Dip, this recipe is something everyone asks me to make. It is always a crowd pleaser.

Eclair Cake

You will need:

1 box graham crackers

2 small boxes Instant French Vanilla pudding

2 3/4 cups milk, plus 1/4 cup milk

8 oz container of Cool Whip

1 cup sugar (not in picture... oops!)

1/3 cup cocoa

1 stick butter

1 tsp vanilla extract



With electric mixer, combine both pkgs of pudding with 2 3/4 cups milk. Fold in Cool Whip.



Line bottom of 9x13 pan with single layer of graham crackers. Top with pudding and smooth layer.



Now you will put another single layer of graham crackers over the top of the pudding. You want the layer to be as flush as possible. I take a little knife and cut pieces of cracker to stick around the sides.



And now... for the icing!!! Mmmmm.

Combine 1 cup sugar, 1/3 cup cocoa and 1/4 cup milk in sauce pan. Bring to boil and boil one minute.



Remove from stove and stir in 1 stick butter and 1 tsp vanilla. I always cut the butter first. It makes it easier to stir in.



Yummmmmmooooooo.

Pour over top of crackers. Try to cover all crackers. Take a spoon and move the icing to the edges.



Making a smooth, shiny layer of icing.



It is so shiny, you can see my reflection in the chocolate.

I couldn't resist... throwing the peace sign.



Hahahhaa. Refrigerate for about 30 min before serving.

I always use a spatula to cut and serve squares.



This is such an easy and amazingly delicious dessert. Beware... you will crave it after this!

ah, this took me back. my grandma used to make this for every picnic/cookout we ever had. she doesn't do much anymore in the kitchen because of her stroke.. but i'll definitely have to make this and surprise her one day!
